Mousse of Mortadella
Ingredients for six persons, perfect for aperitif, perfect to spread on toasts/roasted bread
400 grams of Mortadella di Bologna (without pistacchio)
150 grams fresh whipping cream
1 spoon of grated Parmigiano reggiano
Blend the mortadella with the Parmesan cheese in the mixer until you get a cream; add the whipped cream gently and with a spatula movement from top to bottom.
It can also be prepared with the addition of gelatin and béchamel sauce, if you want to compose it in a mold. I prefer this version to spread wherever you want, simple and tasty!
